Coconut Water Fruit Popsicles
Looking for a way to stay cool during this summer’s record high temperatures? Well, it’s not easy. Recently, I found a recipe on Jennifer Fugo’s site, Gluten Free School.com, for this tasty and healthy cool treat. I whipped up a batch for family and they were quickly polished off. Everyone commented on how refreshing and delicious they were. Since then, I’ve made them several times, but have substituted the last ingredient with other types of fruit such as mango, pineapple, and peaches. I believe, the overall favorite was mango.
Makes 8 small popsicles
Calories: 25 per pop
Coconut Water Freezer Pops
1 cup coconut water
1 banana
1 cup strawberries, hulled
Combine ingredients in a blender and puree until smooth (or to your desired consistency). Pour into freezer molds and place in a level area of your freezer until solid. To remove the popsicles, run your mold under hot tap water until the seal of the frozen liquid releases and you can easy pull each pop out. (If you don’t do this, you WILL pull the handle out without the pop and then you’ve got problems.)
NOTE: You can blend in other fruits and also try the various flavors of coconut water out there. Jennifer’s favorite type of coconut water is the passion fruit flavor from Vitacoco.
If you don’t want to wait around for it to freeze, it also tastes great as a smoothie.
