Powdered Peanut Butter?
When I first heard the words powdered and peanut butter describing one product, I wasn’t sure what to think. The two don’t seem like they would go together. I must admit I have become a peanut butter snob over the years especially after I started making my own in our Vitamix. Peanut butter is something you’ll always find in our backpacks when we are traveling so a light weight version certainly peaked my interest. Plus the fact that it has 85% less fat than traditional peanut butter was also a bonus.
Betty Lou’s Just Great Stuff makes Organic Powdered Peanut Butter with organic peanuts, organic coconut sugar*, and sea salt. How do you eat powdered peanut butter? Simply mix 2 Tbsps of powdered peanut butter with 1 Tbsp of water then use it as a dip for sliced apples, sandwich spread, or in your favorite smoothie.

Overall, I would buy this peanut butter for a road trip or for our next backpacking adventure, but not on a regular basis. At home, I will keep making my own.
*What is Coconut Sugar? Coconut sugar is produced from the sap of the coconut palm flower and has a lower glycemic index than cane sugar. It does not taste like coconut which is a shame for those of us that love coconut.
